Angel Food Cake

Never fails, even in the classroom.

1 1/2 cups egg whites
1/4 teaspoon salt
1 teaspoon cream of tartar
1 cup sifted granulated sugar
1 cup powdered sugar
1 cup sifted cake flour
1 teaspoon vanilla
1/2 teaspoon almond extract

Set oven at 425 degrees and put 10-inch angel food pan in oven to preheat.  Beat egg whites, salt, and cream of tartar until stiff.  Fold in granulated sugar 2 tablespoons at a time until all is used.  Sift together the powdered sugar and cake flour 5 times.  Fold it into the egg white mixture 2 tablespoons at a time.  Add flavorings.  Put in the tube pan and bake 23 minutes.  Cool inverted.
