This is one of our favorite side dishes—a great alternative to fries!
Makes 4 servings
3 medium sweet potatoes, scrubbed and sliced about 1/4 inch thick 2 tablespoons olive oil 1/2 teaspoon cumin 1/2 teaspoon cinnamon 1/2 teaspoon sea salt 1/2 teaspoon paprika 1/2 teaspoon pepper
1. Preheat oven to 375°. Prepare 9x13-inch baking dish by coating lightly with cooking oil spray.
2. Add sliced sweet potatoes to a large mixing bowl, and drizzle with olive oil. Toss until sweet potatoes are lightly coated with oil.
3. Combine spices in a small bowl, stirring together until well mixed. Add to sweet potatoes, and toss until seasoning is well distributed over the sweet potatoes.
4. Bake for 35 minutes, stirring once so that they are evenly cooked. Per serving: 165 Calories 7g Fat (1g sat) 2g Protein 24g Carbohydrates 1g Sugar 3g Dietary Fiber 0mg Cholesterol 248mg Sodium
