Barbecue Pulled Beef

For Amazing Sandwiches and Picnic Platters

This pulled beef in a homemade barbecue sauce is great on sandwiches or as an entrée with your favorite cookout side dishes.   It also makes enough to fill at least 24 slider buns for appetizers, too!

1 (3- to 4-pound) boneless beef chuck roast
1 cup ketchup
1/3 cup root beer
1/2 cup dark brown sugar
1/3 cup red wine vinegar
3 tablespoons Dijon mustard
1 tablespoon Worcestershire sauce
2 teaspoons paprika
11/2 teaspoons onion powder
1/2 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper

Place chuck roast in a slow cooker.

Whisk together all remaining ingredients and pour over roast.

Set the cooker to LOW, cover, and let cook 8 hours, or until meat is fork-tender.

Using 2 forks, shred the beef into the sauce before serving on sandwiches or as an entrée alongside picnic sides.

Helpful Hint
Any beef roast will work with this recipe, but roasts thicker than 3 inches thick should be cut in half to get tender enough to shred in 8 hours.
