2 (3-ounce) packages lemon gelatin
2 cups boiling water
1 (16-ounce) bottle ginger ale
Juice of 1 lemon
1 cup celery, finely diced
1 cup grapes, chopped
1 cup blanched nut meats, chopped
2 cups white chicken meat, diced
1 cup sweet pepper, finely shredded
Lettuce
Mayonnaise, to taste
Add gelatin to boiling water; cool and stir in ginger ale. Add lemon juice. When partially congealed, add celery, grapes, nuts, chicken, and pepper, and pour into mold rubbed with salad oil. Chill until firm. Serve on crisp lettuce with mayonnaise. Serves 8
