Black Bean and Brown Rice Salad

Black Bean and Brown Rice Salad

Yield: 5 servings
Serving Size: 1 cup.

1 1/2 cups home-cooked black beans, or 1 (15-ounce) can black beans, no sugar added
3 cups cooked and cooled brown rice, cooked to package directions
1 1/2 cups finely grated raw zucchini
2 garlic cloves, chopped
1 tablespoon olive oil
1/2 cup diced red onion
1/2 cup grated Parmesan cheese

Mix all ingredients together in a large mixing bowl, and serve.
