Buffalo Pulled Chicken Sandwiches

Perfect Pulled Chicken with Few Ingredients

This pulled chicken has all the flavor (and heat) of buffalo wings, only delivered in a brand-new way.  Serve it on kaiser rolls with your favorite fixings, though either crumbled bleu cheese or bleu cheese dressing is pretty much a prerequisite.

2 pounds boneless, skinless chicken breasts
Salt and pepper to taste
2 tablespoons Louisiana Hot Sauce
1/4 cup chicken stock or broth
6 tablespoons butter or margarine
Kaiser rolls, lettuce, sliced tomato, and crumbled bleu cheese to serve

Generously season the chicken breasts with salt and pepper and place in a slow cooker.

Add hot sauce and chicken broth to the cooker.
Set the cooker to LOW, cover, and let cook 8 hours.

Add butter and let melt into the sauce in the cooker.
Using a fork, shred cooked chicken into the sauce in the cooker.
Serve shredded chicken on kaiser rolls with lettuce, tomato, and crumbled bleu cheese. 

 To cool down the hot sauce further, you can serve with bleu cheese dressing spread on the buns in place of crumbled cheese.

Make It Memorable
To make these sandwiches really special, thinly slice celery using a kitchen slicer (mandolin) and let pickle in the pickling liquid from an empty jar of dill pickles as the chicken cooks.  Then add the pickled celery to the finished sandwiches.
