This little salad is an impressive presentation.
4 Roma tomatoes
8 ounces mozzarella cheese, cut into blocks
Spring mix salad greens
4 ounces mozzarella cheese, shredded
¼ cup chopped fresh basil
Seasoned salt and ground black pepper to taste
2 tablespoons olive oil
Hollow out tomatoes and fill with cheese blocks. Place on a bed of greens and shredded cheese. Season with basil, salt, and pepper, and drizzle with olive oil.
Yield: 4 servings
