Chicken Crock Pot Gumbo

Put it on and let it do its thing!

2 strips bacon, diced
1 recipe Microwave Roux
3 cups boneless, skinless chicken, cut to bite size
1 (10-ounce) package frozen cut okra
5 cups hot water
4 chicken bouillon cubes
1 tablespoon brown sugar
1 teaspoon K’s Cajun Seasoning (or salt and pepper)
1 (8-ounce) can tomato sauce (optional)
2 teaspoons parsley flakes (optional)
1 (6-ounce) can clams or shrimp (optional)

Fry bacon pieces lightly, not crisp.  Pour bacon and all ingredients except seafood into crock pot and stir well.  Cook on low all night or all day (8 hours or so).  Add seafood 10 minutes before turning pot off; stir, cover, and let sit while you cook the rice.  Serve over rice with filé.  Serves 8–10.

NOTE:  Crock pot cooking retains liquid, so even with okra and roux, it likes a little filé, too.
