Chicken Parmesan Burgers

Chicken Parmesan Burgers

Serves:  4

1 pound ground chicken
1 tablespoon chicken concentrate
1/4 cup finely chopped fresh basil leaves
1/2 cup whole-grain plain bread crumbs
1/4 cup shredded Parmesan cheese
1 tablespoon olive oil
1 cup tomato sauce
8 ounces fresh mozzarella cheese, cut into 8 slices
4 soft Italian-style hoagie rolls, split
Basil leaves for garnish


Preheat oven to 350°.

Combine chicken, concentrate, chopped basil, bread crumbs and Parmesan.  Form into log-shaped patties (2x6 inches).

Heat olive oil in 10-inch nonstick skillet, and cook patties 8 minutes or until done, turning once.

Arrange Italian hoagie rolls on cookie sheet, and top each with a chicken patty.  Drizzle 2 tablespoons tomato sauce onto each, then top with mozzarella.  Bake 10 minutes or until cheese is melted and rolls are toasted.  Garnish each with additional basil leaves.
