Chocolate Peanut Butter Cake
1/2 cup honey
2 egg whites
1 cup whole-wheat pastry flour
1 tablespoon baking powder
1/3 cup peanut butter, no sugar added
2 teaspoons pure vanilla extract
1/2 cup unsweetened cocoa powder
3/4 cup unsweetened applesauce
Line bottom of slow cooker with parchment paper, cut to fit. Spray with a light coat of olive oil, using an oil sprayer. Combine honey and egg whites, mixing well. Add remaining ingredients, and blend until smooth. Pour batter evenly into slow cooker and cook on LOW for 4 hours, or until a knife inserted in the middle pulls out clean.
If desired, top each slice with a dollop of peanut butter.
