Cranberry and Pumpkin Spice Granola
2 cups multigrain cereal or quick-cooking oatmeal
1/4 cup honey
1 tablespoon pumpkin pie spice, no sugar added
1/2 cup fruit juice-sweetened cranberries
Place ingredients in slow cooker, and stir with a wooden spoon to combine. This is one of those rare recipes where you want to stir frequently. Keep the lid vented through the entire cooking process. Cook on HIGH for 21/2–3 hours, or until the granola has enough crunch for your taste.
Note: To vent the lid, wedge the handle of the wooden spoon between the lid and the pot.
