Cremini Mushroom Soup

This delicious and comforting soup will keep you coming back for more. And at just 71 calories per cup, having seconds is not a problem. Plus, you’ll be getting vitamin B6, vitamin K, and potassium. So dig in!
1 shallot, chopped 1 tablespoon olive oil 4 cups low-sodium chicken broth, no sugar added 11/2 pounds cremini mushrooms, cleaned and sliced 1 teaspoon garlic powder 1/4 cup chopped fresh flat leaf parsley Salt to taste Grated Parmesan for garnish
Using a medium soup pot, saute the shallot in the olive oil until it becomes a bit translucent. Pour in the chicken broth, and add the mushrooms, garlic powder, and parsley. Cook at a gentle boil until the mushrooms are wilted. Add salt to taste, and serve topped with a small amount of Parmesan cheese.
Note: The flavors of this soup develop a bit more with time. Allowing the soup to sit and cool for an hour or so, will make for a tastier soup.
