Dinner in a Skillet
6 lean pork chops 1 tablespoon shortening or fat 2 tablespoons chopped onion 1 green pepper, sliced in rings 1 can tomatoes (21/2 cups) 1/3 cup rice 1 teaspoon salt 1/4 teaspoon pepper
Brown the chops in hot fat; pour off any excess. Add onion and green pepper and pour tomatoes over the top. Sprinkle the rice around the chops, also the salt and pepper. Cover; cook over low heat until the chops are tender, about one hour.
