Dixie Sweet Potato Pie


PIE:

1 cup cooked and mashed sweet potatoes

1 (12-ounce) can evaporated milk

1/2 cup margarine, melted

2 cups sugar

4 eggs

1 teaspoon nutmeg

1 teaspoon cinnamon

1 teaspoon vanilla

2 deep-dish pie shells, unbaked


TOPPING:

1 cup brown sugar 

1 tablespoon margarine, melted 

1 teaspoon vanilla

1 egg, well beaten


Preheat oven to 350º. With an electric mixer, combine all Pie ingredients.  Mix well. Pour into pie shells, and bake 30 minutes or until lightly browned. Combine all Topping ingredients, and spread over

pies. Return to oven until browned. Watch closely—Topping will burn easily. Serves 16.
