Flax Seed Pancakes

Flax and Apple Oatmeal

Yield: 6 servings
Serving Size: 3 (3-inch) pancakes

Pancakes can be healthy!  With the right mix of ingredients, you get a nice chunk of nutrients in the most important meal of the day.  One serving of these pancakes is a great way to start your day with fiber, selenium, manganese, thiamin, phosphorus, and magnesium—and they’re low in saturated fat and cholesterol, too. 

2 cups white whole-wheat pastry flour
2 egg whites
3 cups milk (we used almond milk, but any milk will work)
1/4 cup flax seeds
2 teaspoons vanilla extract
1 teaspoon baking powder (aluminum free)

Whisk all ingredients together, and cook as you would normally, using a nonstick pan.
