Fun Lady’s Tomato Pie
Rich and delicious.
1 (9- or 10-inch) deep-dish pie crust, baked
Bake in preheated 350° oven for 10 minutes. Cool completely.
3 cups (12 ounces) shredded mozzarella cheese
1 pound cooked, crumbled bacon
1 1/2 cups chopped green bell pepper
2 avocados, sliced
2 large or 4 medium tomatoes, sliced and seeded
1 cup mayonnaise
1 cup freshly grated Parmesan cheese
1/8 teaspoon bottled hot pepper sauce
1/2 teaspoon Worcestershire
1/4 cup chopped fresh parsley
In prebaked, cooled crust, layer in order, 1 cup mozzarella cheese and 1/2 each of the bacon, green bell pepper, avocados, and tomatoes. Sprinkle with oregano and basil. Repeat. Put the third cup of mozzarella cheese over the second layer.
Mix mayonnaise, Parmesan, hot pepper sauce, and Worcestershire; spread over the top. Sprinkle with chopped parsley. Bake at 350 degrees for 30 minutes or until golden. Let stand 10–15 minutes. Serve warm or cool. Store in refrigerator. Serves 6.
