Grouper with Dilled Cucumber Sauce  

DILLED CUCUMBER SAUCE:
1 cup peeled, seeded, and diced cucumber        
1/4 cup sliced green onions    
1/4 cup oil    
1 tablespoon lemon juice        
2 sprigs fresh dill, or 1 teaspoon dried dill weed
1/2 teaspoon salt
Freshly ground pepper to taste

In an electric blender or food processor, combine all sauce ingredients and puree.  Refrigerate.

3 tablespoons butter   
1 tablespoon lemon juice   
2 (6-ounce) grouper fillets
2 sprigs fresh dill

Melt butter in a small saucepan and add lemon juice.  Set aside. 

Grill fillets over hot coals for 5 minutes per side.  Baste while cooking, using sprigs of dill to brush on lemon butter.  Serve with Dilled Cucumber Sauce.  Serves 2. 

Note:  The Dilled Cucumber Sauce is also an excellent accompaniment to grilled or steamed vegetables.
