Ice Cream Sugar Cookie Sandwiches

1 cup powdered sugar
1 cup white sugar
1 cup butter
1 cup vegetable oil
2 eggs
1 teaspoon vanilla flavoring
4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cream of tartar
Ice cream

Cream powdered sugar, white sugar, butter, and vegetable oil; beat well.  Add eggs and vanilla; beat until fluffy.  Sift flour, baking soda, salt, and cream of tartar; add to creamed mixture.  Roll into balls the size of walnuts and roll in granulated sugar.  Place on ungreased cookie sheet and bake at 350 degrees for 10 minutes.

Once cooled, place 1 dip of softened ice cream between cookies and slightly press together.  Wrap in clear plastic and store in freezer.  When serving, top with fudge sauce, whipped cream and a cherry.
