Kielbasa with Apples and Cabbage

A Family Meal, Ready When You Are

Smoky kielbasa sausage is perfectly matched with homemade sweet and sour cabbage in this family-pleasing dish.  The addition of apples adds even more crunch and sweetness.  Serve alongside potatoes for a full meal.

1 large yellow onion, thinly sliced
16 ounces kielbasa sausage, cut into 1-inch lengths
1 small head red cabbage, shredded
2 large apples, cored and cut into wedges
3 tablespoons butter or margarine
1/4 cup cider vinegar
1/2 cup ketchup
1 tablespoon light brown sugar
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper

Place onion in a lightly greased skillet over medium-high heat, and sauté until lightly caramelized, about 5 minutes.  (You can also do this right in the crock of many modern slow cookers by using the cooker’s browning function.)

Place caramelized onion in a slow cooker and cover with remaining ingredients, stirring to combine.
Set the cooker to LOW, cover, and let cook 4 hours, or until ready to serve.  Serve using a slotted spoon.

Make It Easier
You can also make this with a 16-ounce bag of shredded coleslaw cabbage in place of shredding your own red cabbage.
