So many people love this dish! It’s quick to fix, it’s very tasty, very low in fat, and it’s filled with energy.
1 medium potato
1/4 cup chili hot beans
1/2 tomato, chopped
2 tablespoons chopped green onion
1/2 ounce (1/3 cup) shredded low moisture, part skim, mozzarella cheese
Bake potato in microwave 4 minutes, or till done; split and mash a bit. Top with the beans. Top with tomato, onion, and cheese. Now add salsa for great Mexican flavor. Makes 1 serving. (Pictured on cover.)
