3 cups beef broth, no sugar added
1 (141/2-ounce) can diced tomatoes
1 cup dry brown lentils
1 teaspoon onion powder
1 teaspoon paprika
1 large carrot, grated
1 tablespoon chopped fresh parsley
Combine all ingredients in slow cooker and cook on LOW for 8–10 hours, or until lentils are soft.
Note: Add more onion powder and/or paprika for more intense flavor.
