Lime, Cilantro, and Mandarin Orange Pork

Lime, Cilantro, and Mandarin Orange Pork

2 top pork loin chops
Zest of 1 lime
Juice of 2 limes, plus extra on reserve
4 Mandarin oranges, peeled and segmented (chop, if desired)
Salt and pepper to taste
Lime slices for garnish

Place chops in bottom of slow cooker and sprinkle with zest and juice.  Cover, and cook on LOW for 46 hours or until the internal temperature of the meat reaches at least 165.  When finished cooking, remove from slow cooker, and sprinkle with extra lime juice.  Top with Mandarin oranges, and season to taste.  Garnish with lime slices.
