Mango and Cilantro Quesadilla

Mango and Cilantro Quesadilla

This is a filling meal with lots of calcium, and vitamins A and C.  It’s a bit higher in fat, so balance this out with your meal plan for the remainder of the day.  All things can be enjoyed in balance and moderation.

1 large whole-wheat tortilla
1/2 cup finely chopped fresh mango
1 tablespoon chopped fresh cilantro
1/4 cup finely grated Jack cheese

On the large, whole-wheat tortilla, layer the mango and cilantro, and top with cheese.  Bake at 350° for 10–15 minutes, or until the cheese is completely melted.  Cool slightly, fold in half, and cut into triangles.
