Maple Mustard SalmonMaple Mustard Salmon

Makes 4 servings

1 tablespoon Dijon mustard
1 tablespoon maple syrup
1 teaspoon red wine vinegar
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
20 ounces wild salmon fillets

1. Preheat oven to 475.

2. Mix together mustard, maple syrup, vinegar, salt, and pepper. Brush generous layer onto the top of salmon fillets.

3. Place salmon on a baking pan or broiler pan lined with foil, and cook for 1215 minutes, until the fish flakes easily when tested with a fork.

4. Serve warm or at room temperature.
