Maple Mustard SalmonMaple Mustard Salmon

Makes 4 servings

1 tablespoon Dijon mustard
1 tablespoon maple syrup
1 teaspoon red wine vinegar
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
20 ounces wild salmon fillets

1. Preheat oven to 475°.

2. Mix together mustard, maple syrup, vinegar, salt, and pepper. Brush generous layer onto the top of salmon fillets.

3. Place salmon on a baking pan or broiler pan lined with foil, and cook for 12–15 minutes, until the fish flakes easily when tested with a fork.

4. Serve warm or at room temperature.
