CRUST :
2 cups all-purpose flour
1–11/2 cups sugar
4 teaspoons baking powder
1/2 teaspoon salt
11/2 cups milk
1 teaspoon vanilla
Combine flour, sugar, baking powder, and salt. Stir in milk and vanilla;
set aside.
FILLING :
2 quarts peach slices, drained
1/2 stick butter
2 teaspoons lemon juice
1/2 cup sugar
3 tablespoons cornstarch or clear gel
3/4 cup water
In saucepan, bring first 4 Filling ingredients to a boil. Mix together cornstarch and water to make a paste; gradually add to Filling mixture.
Pour into 3-quart Pam-sprayed baking dish, then pour Crust mixture evenly over top.
Topping:
1 stick butter
1/4 cup sugar
1 teaspoon cinnamon
Melt butter, and pour over Crust. Mix together sugar and cinnamon; sprinkle over top. Bake at 350° for 40 minutes. Serve warm with milk.
