A great summer dessert! Nothing pairs with peaches quite like toasted almonds—it’s been scientifically proven! Peaches and almonds actually share so much of the same flavor compound that some almond extracts are made from peach pits.
32 ounces frozen peach slices
3 tablespoons cornstarch
1/4 cup sugar
1/3 cup water
1/2 cup all-purpose flour
1/2 cup toasted almond slivers
1/2 cup light brown sugar
1/2 teaspoon ground cinnamon
1 pinch salt
1/4 cup cold butter (1/2 stick)
Spray the crock of a slow cooker with nonstick cooking spray.
Place frozen peach slices in cooker, and then whisk together remaining PEACHES ingredients. Pour over top of peaches.
Use a fork to combine all CRUMBLE ingredients, cutting the cold butter into the dry ingredients.
Crumble the mixed topping over top of peaches in slow cooker.
Cover, set cooker to HIGH, and let cook 2 hours.
Turn cooker off, uncover, and let stand 15 minutes before serving.
Toast slivered almonds in a large skillet over medium heat to toast. Shake the pan every 30 seconds to redistribute almonds, just until they are golden brown.
