Melding chocolate and peppermint in the slow cooker is pure perfection. Skinny never tasted so good!
4 cups 1% milk
1/4 cup 100% cocoa
1/4 cup sucanat (organic sugar)*
1/2 teaspoon pure peppermint extract
Add milk, cocoa, and sucanat to the slow cooker; whisk briskly until cocoa is combined with the other ingredients, about 30 seconds. Cover; turn slow cooker on LOW and heat 2 hours.
Using a ladle, serve into mugs, and sprinkle a little cocoa on top.
Tip: For a frothy presentation, while still in the slow cooker, whisk chocolate for about one minute. Be careful not to allow contents to splash on skin, as it is very hot at this point.
*Sucanat is an excellent substitute for brown or white sugar. It is dehydrated, freshly squeezed sugar cane juice. Sucanat can be found in the organic section of most supermarkets or at any whole foods type market. It’s also called organic sugar.
