Pesto Chicken “Deli Meat”
If you love deli meats, but don’t like the salt content, then you should love this flavorful recipe. Simply slice thin and use as you would any deli meat.
2 large boneless, skinless chicken breasts (about 8 ounces each)
2 teaspoons prepared basil pesto, no sugar added
Salt to taste (add after cooking)
Tenderize chicken breasts with a meat tenderizer. Spread pesto between the 2 chicken breasts, spreading it evenly over entire surface of chicken. Roll chicken up, and lay in slow cooker open side down so they don’t unroll. Cover, and cook on LOW for 3–4 hours, or until chicken is fully cooked.
