Popover Pancakes
It's fun to watch it pop, and it's mighty good too!
1/2 cup all-purpose flour 1/2 cup milk 2 eggs, slightly beaten 1/4 cup butter 2 tablespoons confectioners' sugar Juice of 1/2 lemon Preheat oven to 425. In mixing bowl combine flour, milk, and eggs. Beat lightly. The batter will be slightly lumpy. Put butter into a 12-inch round frying pan with heatproof handle. Place in oven until very hot. Pour in the batter, return to oven, and bake 20 minutes or until pancake is puffed all around the sides of the pan and golden brown. Remove from oven and sprinkle with confectioners' sugar and lemon juice. Serve immediately. Serves 2-3. (Pictured on the cover of Recipe Hall of Fame Quick & Easy Cookbook)
