Pork Tenderloin with Mustard Sauce

2 pounds whole pork tenderloin (1 to 1 1/2 inches diameter)   
1 clove garlic, cut in half   
1 1/2 teaspoons salt
1 cup red wine
1/2 teaspoon onion salt
1/2 teaspoon Beau Monde seasoning

1 cup mayonnaise   
1 tablespoon honey   
1 tablespoon finely chopped fresh parsley
2 teaspoons prepared mustard
1 teaspoon curry powder
1/2 teaspoon paprika

Rub the tenderloin with the cut garlic thoroughly.  Sprinkle with salt and bake in a shallow baking pan about 1 1/4 hours (until tender) at 325į.  Combine the wine, onion salt, and Beau Monde and simmer 1 minute.  Combine all ingredients for the Mustard Sauce.  Slice the tenderloin, pour hot wine sauce over the slices, and serve Mustard Sauce in a separate dish.  Serves 4-6.

Editorís Extra: If you canít find Beau Monde seasoning, recipe is fine without it.  The Mustard Sauce is so good, it can be used over vegetables and even as a dip!
