In a small mixing bowl, combine warm water, yeast, and sugar. Let stand 5 minutes.
Add bread flour, olive oil, and salt to a large mixing bowl.
Pour the water and yeast mixture into the flour mixture and knead until a firm dough has formed. If dough is sticky, knead in additional flour a few pinches at a time. Form dough into a ball.
Spray a slow cooker with nonstick cooking spray and set to HIGH for only 5 minutes.
Turn slow cooker off entirely. Place ball of dough inside and cover immediately. Let dough rise 45–60 minutes.
Once dough has risen, divide into 2 pieces. Flour a surface and use your fingers to stretch and pull each piece into a round crust. Push from the center out to stretch each piece of dough until about 12 inches in diameter.
Top with your favorite pizza sauce and toppings, and place on round or sheet pans dusted with cornmeal to prevent sticking. Bake in an oven preheated to 450° for 12–15 minutes, or until toppings are browned and crust is crispy.
