Rainbow Salad

Colors of the rainbow foods, or superfoods, have long been thought to have disease-preventing properties. Bell peppers are thought to help in the prevention of heart disease, strokes, and blood clots.
1 red bell pepper, cut into strips 1 yellow bell pepper, cut into strips 1 green bell pepper, cut into strips 6 radishes, thinly sliced 1 small red onion, quartered, thinly sliced 1 small cucumber, cut in half and thinly sliced 1/4 cup blue cheese crumbles (optional)
Combine all ingredients in a salad bowl, toss to combine, drizzle with Honey-Lemon Dressing (below), and top with blue cheese crumbles, if desired.

2 tablespoons honey 2 tablespoons lemon juice 2 tablespoons extra virgin olive oil 1/4 teaspoon dried oregano 1/8 teaspoon freshly ground black pepper Salt to taste
Combine ingredients in blender, and blend until smooth. Refrigerate until ready to use.
