Raleigh House Buttermilk Pie

This pie was a popular dessert at Raleigh House.  Many of my customers bought several for their freezers.  They freeze well.

1 stick margarine, melted
2 cups sugar
3 eggs
3 rounded tablespoons flour
1 cup buttermilk
Dash nutmeg
1 teaspoon vanilla
1 (9- or 10-inch) unbaked pie shell

Mix melted margarine and sugar in mixer; beat well.  Add eggs, one at a time, alternating with flour, beating after each addition.  Add buttermilk, nutmeg, and vanilla.  Mix again and pour into pie shell.  Bake on the lower rack of a 375-degree oven for 30-35 minutes or until edges are firm but center is still a little trembly.  This pie is good hot or cold.  We always heated it in the microwave before serving.  Yields  6-8 servings.
