1 tablespoon butter 2 large peaches, sliced (about 3 cups) Pinch of salt 2 tablespoons brown sugar 3 tablespoons balsamic vinegar 6 cups salad greens 1/4 cup sliced almonds, toasted 2 ounces goat cheese, crumbled Melt butter in 10-inch skillet. Add peaches and salt. Cook over medium heat 4 minutes or until slightly softened, stirring occasionally. Add sugar and vinegar. Cook 2 minutes until thickened slightly and peaches are tender.
Arrange greens on platter. Top with peach mixture, almonds and goat cheese.
TIP: Add cooked chicken or shrimp to make this a main dish. Consider other fruits instead of the peaches: apricots, pineapple, apples or pears.
