4 slices bacon, chopped 2 heads radicchio, sliced (about 8 cups) 3/4 teaspoon salt 1 small apple, peeled, cored and julienned 2 tablespoons balsamic vinegar 1/4 cup unshelled pistachios, toasted, if desired 2 ounces crumbled blue cheese (about 1/4 cup)
Cook bacon over medium heat in 10-inch saute pan about 6 minutes until crisp. Transfer bacon pieces to paper towels and drain. Add radicchio and salt. Cook over medium heat 8 minutes or until radicchio is tender, stirring occasionally.
Toss radicchio with reserved bacon, apple and vinegar. Sprinkle with pistachios and cheese.
TIP: For a vegetarian version, omit bacon, and saute radicchio in 1 tablespoon olive oil.
