Sesame PorkSesame Pork

Makes 4 servings

11/4 pounds boneless pork chops
1 teaspoon minced fresh ginger
2 tablespoons low-sodium tamari soy sauce
1 small scallion, well rinsed and finely chopped
2 tablespoons rice vinegar
1 tablespoon honey or agave nectar
1 teaspoon sesame oil, divided
2 tablespoons sesame seeds
1 teaspoon olive oil

1. Pound and flatten pork loin chops into about 1/4-inch thickness.

2. Whisk together ginger, tamari, scallion, rice vinegar, honey, and 1/2 teaspoon sesame oil.
Add pork chops, and marinate for 30 minutes to a few hours, covered, in the refrigerator.

3. Remove from marinade. Press sesame seeds into pork chops. Heat remaining sesame oil and olive oil in nonstick pan over medium heat. Add chops, and brown, cooking on both sides for 45 minutes or until pork is cooked through.

4. Add marinade to pan, and bring to a low simmer. Lower heat, and cook another few minutes, until pork is cooked through.

NOTE: This dish can also be made more like a typical stir-fry by slicing the pork into bite-size pieces, stir-frying it in the oils, and adding the marinade sauce (minus the sesame seeds) halfway through the cooking. Sprinkle the sesame seeds over the entire dish when serving.
