1. Pound and flatten pork loin chops into about 1/4-inch thickness.
2. Whisk together ginger, tamari, scallion, rice vinegar, honey, and 1/2 teaspoon sesame oil. Add pork chops, and marinate for 30 minutes to a few hours, covered, in the refrigerator.
3. Remove from marinade. Press sesame seeds into pork chops. Heat remaining sesame oil and olive oil in nonstick pan over medium heat. Add chops, and brown, cooking on both sides for 4–5 minutes or until pork is cooked through.
4. Add marinade to pan, and bring to a low simmer. Lower heat, and cook another few minutes, until pork is cooked through.
NOTE: This dish can also be made more like a typical stir-fry by slicing the pork into bite-size pieces, stir-frying it in the oils, and adding the marinade sauce (minus the sesame seeds) halfway through the cooking.
