Spicy Southwest Black Bean Soup A little bit of spice adds up to big time flavor in this delicious southwester delight. Easy and quick to throw together, this soup will make the spice-loving folks in your home happy they came home for dinner.
1 cup dry black beans 2 cups low-sodium chicken broth, no sugar added 1 (12-ounce) jar salsa, no sugar added 1 cup frozen corn, thawed 1/2 large red bell pepper, chopped 1 (15-ounce) can black beans, no sugar added (optional, if you want more beans)
Combine ingredients in slow cooker, adding the can of additional black beans, if desired. Cover, and cook on LOW for 8–10 hours.
Note: You can adjust the level of spiciness in this recipe with the salsa used.
