Spicy Turkey Burgers 

Makes 4 servings

1 pound ground turkey
1/3 cup quick-cooking oats
1/2 cup salsa, divided
1/4 cup finely chopped shallots
1/4 cup chopped cilantro
1 teaspoon Worcestershire
1 tablespoon finely chopped chipotle chiles canned in adobo
1 teaspoon cumin powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup shredded chèvre cheese (feel free to substitute favorite cheese, smoked mozzarella is good here)

1. Combine turkey and oats in a large bowl. Add 1/2 the salsa along with the other ingredients, and mix thoroughly.

2. Form mixture into 8 flat patties. Place 1 tablespoon of chèvre cheese on 4 of the patties. Top with second patty and press sides together so that you have 4 “stuffed” turkey patties.

3. Grill on preheated grill at medium-high for 5–7 minutes per side.

4. Serve “naked” or with whole-grain buns, sliced tomato, and onion. Top with remaining salsa.
