Summer Linguine  

This is a crowd pleaser.  The fresh basil makes all the difference..

4 large tomatoes, chopped
1 pound Brie cheese, coarsely chopped     
5 garlic cloves, peeled, minced
1 cup chopped fresh basil
1 cup olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
6 quarts water
1/8 teaspoon olive oil
1 tablespoon salt
1 1/2 pounds uncooked linguine
1/4 cup freshly grated Parmesan cheese
Freshly ground pepper to taste

Combine tomatoes, Brie cheese, garlic, basil, 1 cup olive oil, 1/2 teaspoon salt, and 1/2 teaspoon pepper in bowl; mix well.  Let stand, covered, for 1 hour or longer.

Bring water to a boil in large saucepan.  Stir in 1/8 teaspoon olive oil and 1 tablespoon salt.  Add linguine.  Cook for 8–10 minutes or until firm; drain.  Toss hot linguine with tomato mixture in bowl.  Brie will melt into pasta.  Sprinkle with Parmesan cheese and fresh pepper.  Yields 6 servings.
