If you love to make sushi but don’t like all the refined sugar you have to add to the rice, try this mild-flavored version. It’s a wonderful addition to any sushi roll.
1 cup short-grain brown rice
2 teaspoons rice wine vinegar
2 tablespoons honey
2 cups low-sodium chicken broth, no sugar added
Combine everything in your slow cooker, and cook on LOW, covered, for 2–4 hours, or until rice is fully cooked. During the last half hour of cooking, stir once or twice to be sure grains are evenly cooked. Rice should be slightly mushy when finished.
