1 cup eggnog 1 (8-ounce) container mascarpone cheese 1 cup whipped topping 3/4 cup strong coffee 1/4 cup sugar 6 day-old pumpkin muffins, cut into large cubes 12 tablespoons miniature chocolate chips Combine eggnog, cheese and whipped topping in a medium bowl.
Combine coffee and sugar in a small bowl.
Layer half of muffin cubes in 6 parfait glasses. Brush with half coffee mixture, and top with half of eggnog mixture, dividing evenly. Top eggnog mixture with 1 tablespoon miniature chocolate chips in each parfait glass. Repeat layers once.
Chill for at least 4 hours or overnight.
