Zucchini Beef Skillet
1 pound ground beef 1 cup chopped onion 3/4 cup chopped green bell pepper 1 1/2 teaspoons salt 1/4 teaspoon pepper 1 teaspoon chili powder 5 cups sliced zucchini 2 large tomatoes, chopped 1/2 cup water 2 cups fresh corn kernels 2 tablespoons chopped pimento 1/4 cup chopped parsley
Saute beef, onion, and bell pepper in large skillet until browned. Drain. Add remaining ingredients. Cover and simmer 15 minutes or until vegetables are tender.
