Alabama Banana Pudding

3/4 cup sugar
Dash of salt
1/4 cup flour
3 egg yolks, beaten
1/2 teaspoon vanilla
2 cups milk
15 vanilla wafers
2-4 bananas, sliced

Combine sugar, salt, and flour; add egg yolks and vanilla. Heat milk in saucepan; slowly add egg mixture.  Cook until thick. Arrange wafers and bananas in shallow 1 1/2-quart baking dish. Add pudding.


MERINGUE:
3 egg whites
6 tablespoons sugar
1/2 teaspoon vanilla

To make Meringue, beat egg whites, sugar, and vanilla until very stiff.  Spread over pudding and bake at 400 degrees until golden brown. Serve warm or cold. Serves 8.

Sweet ‘n’ Easy Barbecue Beef Ribs

 
1 tablespoon garlic powder                                
1 tablespoon pepper                                       
1 tablespoon salt                                              
1 tablespoon brown sugar                                 
5 pounds (or more) country-style beef ribs          
1/2 cup chopped onion
1/2 cup ketchup
1/2 cup strawberry jelly
1/4 cup beer
1/4 cup whiskey
1/4 cup real butter

Combine the garlic, pepper, salt, and sugar in a bowl.  Rub this mix into the ribs.  Place ribs in a covered dish or freezer bag and place in the fridge overnight.  Combine the remaining ingredients and brush on the ribs.  Grill or smoke over medium indirect heat for about 2 hours.  Increase to medium to high heat and grill while basting.  Serve hot.

Hot Brownie with Fudge Sauce
 

This is the chocoholic’s dream come true!  You can even mix this in the same dish you are going to cook it in!
 
1 cup instant biscuit baking mix
1 cup sugar, divided
3 tablespoons plus 1/3 cup cocoa
1/2 cup milk (you can use skim milk if you think it will help)
1 teaspoon vanilla
1 2/3 cups hot water

Mix biscuit mix, 1/2 cup sugar, and 3 tablespoons cocoa in 8x8-inch glass baking dish.  Stir in milk and vanilla until blended.  Sprinkle with remaining 1/3 cup cocoa and remaining 1/2 cup sugar.  (Do not stir.)  Pour water over top and DO NOT STIR!  Bake at 350 degrees for 40 minutes.  Top will look and taste like a brownie.  Underneath is this heavenly chocolate syrup.  Spoon in dessert dishes and top with whipped cream.  This recipe should be outlawed!  It is just not right to be this easy and taste so GOOD!

Terry’s Creamy Potato Salad
 

5 pounds red potatoes
1 cup light mayonnaise                  
1 cup Miracle Whip Salad Dressing
1/4 cup skim milk                             
2 tablespoons mustard                                                       
Salt and pepper to taste
1/2 Green Onion, finely chopped
1 bunch radishes, diced
1 teaspoon minced garlic
4 hard-cooked eggs, crumbled
1/4 cup chopped almonds


Dice and boil potatoes until tender.  Mix mayonnaise, Miracle Whip, milk and mustard until smooth.  Add additional milk, if needed.  Add salt and pepper to taste.  Gently stir in potatoes, green onions, and radishes; blend well.  Before serving, stir in eggs and almonds.  Chill and serve cold.

Seaside Stuffed Squash

An attractive way to serve squash—and good.

1 pound summer squash                       
1/2 cup
chopped green bell pepper             
1/2 cup
grated Cheddar cheese
1/2 cup sour cream
1/2 cup
minced onion
4 slices bacon, cooked and crumbled

 

Boil squash 10-12 minutes.  Slice lengthwise.  Scoop out pulp.  Add remaining ingredients to pulp and mix well.  Fill squash with mixture, placing each in a baking dish.  Bake 20 minutes in a preheated 350-degree oven.  May be prepared ahead of time and refrigerated until ready to bake.  Serves 6.
